This recipe for 24 Hour Cucumber Salad is easy to throw together and we start making this salad as soon as we have cucumbers! Sometimes I choose to not add as much sugar as the recipe calls for, but if ever serving to guests I include the whole amount. Turn out sugar makes it taste better, shocker.

A friend shared this recipe with me years ago and there is not a summer that goes by that we do not make this salad. In fact, when the cucumbers are coming in we usually just have a bowl of this in the fridge at at all times.

Cucumbers tend to be a stead crop for us in the summer. Grown fresh they taste so much better than the grocery store variety. There is really no comparison.

The trick to slicing the cucumbers thinly and evenly is to use a mandolin. I used to think my sister-in-law was so fancy to have a mandolin in her kitchen gadgets, but they really do come in handy. I have one that allows you to change the thickness of the slices and it’s really quite useful.

I use the mandolin to slice the onions as well. I cut the onion in half and then run it over the mandolin until it’s all thinly sliced.

How to Make 24 Hour Cucumber Salad

Start by cutting up the cucumbers into bite-sized pieces. I prefer to slice them thin with a mandolin. Then place the cucumbers in a large bowl. Similarly, thinly slice the onions and add them to the cucumbers. I typically do not use the tomatoes in this recipe.

In a separate container, like a glass pyrex measuring cup, combine all the dressing ingredients: 3/4 cups of sugar, 2/3 cups of vinegar, 1/3 cups of vegetable oil, 1/2 tsp of black pepper, and finally 1 tsp of salt.

Pour this dressing mixture over vegetables and place the cucumber salad in the refrigerator for approximately 24 hours.

When you are ready to serve simply stir the salad and serve.

Vegetables

  • 4 medium cucumbers, Burpless preferred
  • 2 pints cherry tomatoes, or 4 Medium Tomatoes (optional)
  • 2 medium onions

Dressing

  • 3/4 cup sugar
  • 2/3 cup vinegar
  • 1/3 cup vegetable oil
  • 1/2 tsp black pepper
  • 1 tsp salt

Instructions

  1. Cut up the vegetables into bite-sized pieces, or I like to slice the cucumbers thin, and place in tupperware.
  2. If using cut up tomatoes and onions.
  3. In a separate container combine the dressing ingredients.
  4. Pour dressing mixture over vegetables and leave salad in refrigerator for approximately 24 hours. Stir and serve.

Notes

Sometimes I I leave out the tomatoes in this recipe. I have made it with and without and it's great either way.
