The original recipe was for zucchini, but we have used it with summer squash and cucumbers as well. You could also use it with green tomatoes. This recipe is good for using up a bunch of garden veggies all at once.
How to Make Grandma’s Relish
Start with cleaned vegetables, and cut, chop, or grind them to equal 1 quart. Add in 6 onions, 2 peppers, 2 cloves of garlic, and 1/2 cup salt.
This is an old recipe when it was more common to have a grinder for your vegetables, but I just put the veggies in a food processor and be on my merry way.
Cover the vegetable mixture, how ever you chose to process it, with ice cubes and let it stand for 3 hours.
After 3 hours on ice, drain the vegetable mixture. Next, combine it with 1 1/2 tablespoons of turmeric, 1 1/2 tablespoons of celery seed, 2 tablespoons of mustard seeds, 3 cups of vinegar, and 5 cups of sugar.
Heat the relish to a good boil and seal in jars.
