This classic cucumber recipe for Grandma’s Relish can be used as a sandwich topping, as a topping for deviled eggs, or eaten straight out of the jar!

This recipe is for Cucumber, Zucchini, or Summer Squash Relish. This recipe is good for using up a bunch of garden veggies all at once.

How to Make Green Bean Bacon Bundles

Start by cooking the green beans until crisp and tender, but not well done. Then wrap about 15 beans in each bacon strip and secure with a toothpick.

Place bundles on a foil-covered baking sheet and bake at 400° for 10-15 mins until the bacon is crisp.

In a skillet, saute 1 tablespoon of chopped onion in 3 tablespoons of butter until tender. Add 1 tablespoon of vinegar, 1 tablespoon of sugar, and 1 tablespoon of salt. Heat this through and place in a separate container.

Then remove the bacon bundles to a serving platter. When ready to serve the beans, reheat sauce and pour over each bundle.

Yield: 10 Bundles

These delicious little bundles were served up at a Friendsgiving celebration, then I made them the next week for thanksgiving. This recipe is a keeper!

Ingredients

  • 1 1/2 lbs fresh green beans, trimmed
  • 10 bacon strips
  • 1 Tbls finely chopped onion
  • 3 Tbls butter, or bacon drippings
  • 1 Tbls white wine vinegar
  • 1 Tbls sugar
  • 1/4 tsp salt
