I love beets roasted, pickled and boil, but this recipe for Lemon Roasted Beets with Feta is probably my favorite way to enjoy fresh beets. You get the sweetness of the beets with the savory flavors of garlic and feta for a perfect vegetable side dish.

This recipe is for 3 large beets, but I usually make a few batches at one time and then freeze them in dinner-sized portions to enjoy later. For other ways to preserve beets check out the farm to fork beets page.

A few of my favorite kitchen tools that help in this recipe are the swiss pro peeler and microplane zester. I have to admit I was resistant to learn a new way to peel vegetables, but now this is the only peeler I use. It’s important to hand wash this particular peeler. If I’m will to hand wash something in the kitchen it must be handy because that’s usually how I weed out the good tools from the bad.

The microplane zester makes an easy job of zesting fruit. I used this handy kitchen gadget at my sister-in-laws house and order one for myself when I got back home. It’s inexpensive and doesn’t take up much space, so it made the cut in my kitchen.

If you are new to eating beets, I’ll save you from an alarming bathroom experience, you may pee or poop red! No you’re not bleeding out, it’s pretty common. We once had a visitor that was recently in a motocycle accident worry that he had internal injuries after enjoying more than a few beets at our dinner table.

How to Make Lemon Roasted Beets with Feta

If you are starting with your own beets you will first need to clean them well and then peel them. You may wish to wear a pair of disposable kitchen gloves as beets when peeled will make a mess and leave your hands red.

You can half the beets and cut them in slices as stated in the recipes, or cube them. Place them in a large baking dish with 4 chopped garlic cloves, the juice and zest of a lemon, 1 tablespoon of olive oil, then season with salt and pepper to taste.

Cover the baking dish tighly with foil and bake until beets are fork tender which may be about 35 minutes.

Then remove the dish from the oven and top with 1 tablespoon of fresh thyme and 1/4 cup of feta cheese.

Lemon Roasted Beets with Feta

I love this recipe as is, but I typically use whatever I have on hand, so sometimes I leave out the thyme and feta cheese and it's still a delicious way to serve roasted beets.

Ingredients

  • 3 large beets
  • 4 garlic cloves
  • 1 lemon, juice and zest
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 tablespoon fresh thyme
  • 1/4 °cup feta cheese

Instructions

  1. Preheat oven to 400 degrees.
  2. Peel beets, cut in half, and slice into 1/4" thick slices.
  3. Place in large baking dish with garlic, lemon zest, lemon juice, olive oil, and season with salt and pepper.
  4. Tightly cover dish with foil, place into oven, and bake for 35-40 minutes, until beets are fork tender.
  5. Remove from oven, place on serving platter, and top with fresh thyme and feta. Serve and enjoy!

Notes

I am typically feeding the herd in a hurry, and most of my veggies get cubed, put in a large bowl, covered with olive oil, salt (and depending on the veggie pepper, and chopped garlic), and roasted at 400 degrees for 30 or so minutes. Exact measurement aren't really a part of this process. This is my favorite way to prepare roasted vegetables.

Roasted beets taste great even without the lemon & feta, so if you’re short of time or ingredients doesn’t hesitate to simply roast and enjoy!
