Roasting is my favorite way to prepare this sweet root vegetable. The roasted sweet potatoes caramelize in the oven for a delicious side dish. You can use white, purple, orange sweet potatoes, or a combination of colors.

One year we planted a field of sweet potato slips, which led to a huge crop of sweet potatoes, and finally the need for a cold room to house the wheelbarrows of sweet potatoes. So I am always on the lookout for new sweet potato recipes, but I usually come back to the simplicity of this roasted sweet potato recipe.

How to Make Roasted Sweet Potatoes

Start with preheating oven to 425° using the convection roast setting. If you have an air fryer or air fry setting this can also be used. Lately, I have started on convection roast for 20 mins, then switch to air fry to crisp everything up.

Grab the sweet potatoes and start by scrubbing, peeling, and finally cubing them. We like to use a variety of orange, white and purple sweet potatoes. If using farm-fresh sweet potatoes you leave the skins on.

Drizzle the cut sweet potatoes with olive oil and sprinkle with salt, and any other spice if opting to use them. Cinamon gives the potatoes a great flavor.

Spread sweet potatoes out on a cookie sheet protected with a silicone liner or parchment paper, then roast them in the oven for 15 mins. Flip and mix the sweet potatoes repeating this every 15 minutes or so of cooking until they are cooked through and slightly charred on the edges.

To achieve the carmelized char the cooking time usually takes about 40 or so minutes depending on how large the sweet potatoes are cut.

  • Sweet Potatoes
  • Olive Oil, drizzled
  • Salt, to taste
  • Chili powder and/or Cinnamon, optional

Instructions

  5. Roast in the oven for 15 mins, mix sweet potatoes and repeat 15 minute cycles of cooking until they are cooked through and slighly charred on the edges. Usually takes about 40 or so minutes depending on how large the sweet potatoes are cut.
